Fish Skillet
Ingredients 3/4 lb skinless firm white-fleshed fish, such as halibut 15 cherry tomatoes 1/2 onion, sliced 3 cloves garlic, smashed and sliced 4 artichoke hearts, drained 8 Kalamata olives 8 caperberries Olive oil 1/4 cup dry white wine Lemon slices Crusty bread, for serving Method Preheat grill to medium-high Combine tomatoes, onion, garlic, artichokes, olives, caper berries, oil, and wine in a large straight-sided skillet (it will be used on the grill). Season fish on both sides with salt and pepper and arrange on top.
